Sustaining Community
Description:
Plating Up the Tongass: A Ketchikan Community Cookbook, 2020
Ketchikan Wellness Coalition

More than 50 recipes feature locally sourced ingredients for a fresh culinary take on the bountiful natural foods harvested in southern Southeast Alaska. Many of the recipes share the voices of the contributors with ingredients like a cup of strawberries "best if from Grandma's front yard," and a note for picking huckleberries that, "only in Alaska would berry-picking be synonymous with bruises."

The cookbook project was supported by a special grant from PeaceHealth Ketchikan Medical Center and led by Ketchikan Wellness Coalition's "Building a Healthier Community" task force. The cookbook is a celebration of our unique culture of living off the land and sea, from spruce tip shortbread cookies and sea asparagus pesto to sea cucumber fritters and the classic smoked salmon.
